Ingredients:

  • 1 pound beef liver, sliced
  • 1 cup shrimp, peeled and deveined
  • 1 cup scallops, patted dry
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 lemon, juiced and zested
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions:

  1. Rinse the beef liver slices under cold water and pat dry with paper towels. Season both sides with salt and pepper.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the liver slices and cook for 3-4 minutes on each side until browned and cooked to your liking. Remove from the skillet and keep warm.
  3. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Add the shrimp and scallops to the skillet, cooking for about 2-3 minutes until they are opaque and cooked through.
  5. Stir in the lemon juice, zest, parsley, thyme, and season with salt and pepper to taste.
  6. Return the cooked liver to the skillet, gently tossing to combine with the seafood medley and sauce.
  7. Serve immediately, garnished with additional fresh herbs if desired.
