Ingredients:

  • 3 lbs beef brisket
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup apple cider vinegar
  • 1/2 cup maple syrup
  • 1/4 cup Dijon mustard
  • 2 teaspoons smoked paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 tablespoons fresh thyme, chopped
  • 2 bay leaves

Instructions:

  1. Preheat your oven to 300°F (150°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Sear the brisket on both sides until browned, about 4-5 minutes per side. Remove from the pot and set aside.
  3. In the same pot, add the diced onion and garlic, sautéing until the onion is translucent.
  4. Stir in the beef broth, apple cider vinegar, maple syrup, Dijon mustard, smoked paprika, black pepper, and salt. Bring to a simmer.
  5. Return the brisket to the pot, add the fresh thyme and bay leaves, and cover with a lid.
  6. Transfer the pot to the preheated oven and braise for 3-4 hours, or until the brisket is fork-tender.
  7. Remove the brisket from the pot and let it rest for 15 minutes before slicing. Serve with the cooking liquid drizzled over the top.
