Ingredients:

  • 2 pounds white potatoes, peeled and cubed
  • 1 cup yellow cheddar cheese, grated
  • 1/2 cup heavy cream
  • 4 tablespoons butter
  • 1/4 cup chives, finely chopped
  • Salt and pepper to taste

Instructions:

  1. Place the peeled and cubed white potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil over medium-high heat.
  2. Once boiling, reduce the heat to medium and cook the potatoes until tender, about 15-20 minutes. You can check for doneness by piercing them with a fork; they should be soft.
  3. Drain the potatoes and return them to the pot. Allow them to sit for a minute to let excess moisture evaporate.
  4. Add the butter to the hot potatoes and mash until smooth using a potato masher or ricer.
  5. Gradually stir in the heavy cream until the desired creaminess is achieved.
  6. Fold in the grated yellow cheddar cheese until melted and well combined.
  7. Season with salt and pepper to taste, and gently mix in the chopped chives.
