Classic Cheddar Mashed Potatoes

These classic cheddar mashed potatoes are creamy, cheesy, and incredibly comforting. Made with white potatoes and rich yellow cheddar cheese, they are elevated with the addition of heavy cream for a luxurious texture. This recipe is nut-free and perfect as a side dish for any meal.

Ingredients:

  • 2 pounds white potatoes
  • 1 cup yellow cheddar cheese, shredded
  • 1/2 cup heavy cream
  • Salt, to taste
  • Black pepper, to taste

Instructions:

  1. Peel the white potatoes and cut them into evenly sized chunks.
  2. Place the potato chunks in a large pot and cover with cold water. Add a pinch of salt.
  3. Bring the water to a boil over medium-high heat, then reduce to a simmer. Cook the potatoes until they are fork-tender, about 15-20 minutes.
  4. Drain the potatoes and return them to the pot. Allow them to sit for a minute to let excess moisture evaporate.
  5. Using a potato masher, mash the potatoes until smooth and creamy.
  6. In a small saucepan, heat the heavy cream over low heat until warm. Do not boil.
  7. Add the warm heavy cream to the mashed potatoes and stir until well combined.
  8. Fold in the shredded yellow cheddar cheese until melted and incorporated.
  9. Season with salt and black pepper to taste. Serve hot.
