Ingredients:

  • 2 pounds white potatoes
  • 1 cup yellow cheddar cheese, shredded
  • 1/2 cup heavy cream
  • 4 tablespoons butter
  • Salt to taste
  • Black pepper to taste

Instructions:

  1. Peel the white potatoes and cut them into evenly sized chunks.
  2. Place the potato chunks in a large pot and cover with cold water. Add a generous pinch of salt.
  3. Bring the water to a boil over medium-high heat, then reduce the heat to medium and simmer until the potatoes are tender, about 15-20 minutes.
  4. Drain the potatoes and return them to the pot. Allow them to sit for a minute to let off steam.
