Ingredients:

  • 1 lb beef sirloin, thinly sliced
  • 2 cups mushrooms, sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tablespoons olive oil
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • 2 medium zucchinis, spiralized
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the sliced beef to the skillet and season with salt and pepper. Sauté until browned, about 3-4 minutes. Remove the beef from the skillet and set aside.
  3. In the same skillet, add the chopped onion and cook until translucent, about 2-3 minutes. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are tender, about 5 minutes.
  4. Pour in the beef broth and Worcestershire sauce, scraping the bottom of the skillet to deglaze. Bring to a simmer and let it reduce slightly, about 3-4 minutes.
  5. Lower the heat and stir in the sour cream until well combined. Return the beef to the skillet and heat through, ensuring everything is coated in the sauce. Adjust seasoning with salt and pepper as needed.
  6. In a separate pot, lightly sauté the spiralized zucchini for 2-3 minutes until just tender.
  7. Serve the beef stroganoff over the zucchini noodles, garnished with fresh parsley.
