Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon brown sugar
  • Juice of 1 lime
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together olive oil, garlic powder, onion powder, cumin, smoked paprika, brown sugar, lime juice, soy sauce, salt, and pepper to create a marinade.
  3. Place the chicken thighs in a large resealable bag or a shallow dish and pour the marinade over the chicken, ensuring each piece is well coated. Marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
  4. Remove the chicken from the marinade and arrange it skin-side up in a baking dish.
