Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 cup mushrooms, sliced (such as cremini or button)
  • 1 cup crème fraîche or plain yogurt
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh parsley, chopped
  • Salt and pepper to taste
  • 1/2 cup chicken broth
  • 1 tablespoon lemon juice

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add the chopped onion and sauté for about 3-4 minutes until translucent.
  4. Add the sliced mushrooms and garlic, cooking for another 5 minutes until the mushrooms are soft.
  5. Pour in the chicken broth and bring to a simmer. Allow it to reduce slightly for about 3 minutes.
  6. Stir in the crème fraîche or yogurt, thyme, and lemon juice, mixing well to combine. Season with salt and pepper to taste.
  7. Return the chicken to the skillet, spooning the creamy mushroom sauce over the top. Cook for an additional 2-3 minutes to heat through.
  8. Garnish with fresh parsley before serving.
