Ingredients:

  • 4 large green bell peppers
  • 1 cup cooked chicken, shredded
  • 1 cup cream cheese, softened
  • 1/2 cup fresh spinach, chopped
  • 1/2 cup corn, cooked
  • 1/4 cup black beans, rinsed and drained
  • 1/4 cup diced jalapeño peppers (adjust to taste)
  • 1 clove garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/2 cup red onion, diced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • 1/4 cup milk
  • 1 egg, beaten
  • 1 tablespoon flour
  • 1 tablespoon sugar (optional, for balance)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the green peppers and remove the seeds. Set them aside.
  3. In a large bowl, combine the shredded chicken, cream cheese, chopped spinach, corn, black beans, diced jalapeños, minced garlic, grated ginger, diced red onion, parsley, lemon juice, salt, and pepper. Mix until well combined.
  4. In a separate bowl, whisk together the milk, beaten egg, flour, and sugar if using. Pour this mixture into the chicken filling and stir until incorporated.
  5. Stuff each green pepper with the chicken mixture, pressing down gently to ensure they are filled completely.
  6. Place the stuffed peppers in a baking dish, and cover with foil. Bake for 30 minutes, then remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the filling is bubbly.
  7. Remove from the oven and let cool for a few minutes before serving.
