Ingredients:

  • 2 cups yellow beans, trimmed
  • 1 large onion, thinly sliced
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon thyme (fresh or dried)
  • Salt and pepper to taste
  • 1 tablespoon balsamic vinegar
  • Fresh parsley, chopped for garnish

Instructions:

  1. In a large pot, bring salted water to a boil. Add the yellow beans and cook for about 5-7 minutes until tender but still crisp. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are caramelized, about 15-20 minutes.
  3. Once the onions are caramelized, add the thyme and balsamic vinegar, stirring to combine. Cook for another 2 minutes.
  4. Reduce the heat to low and pour in the heavy cream. Stir well and let it simmer for about 5 minutes until slightly thickened.
  5. Add the cooked yellow beans to the skillet, stirring gently to coat them in the creamy onion mixture. Season with salt and pepper to taste.
  6. Serve warm, garnished with fresh parsley.
