Ingredients:

  • 1 cup lentils, rinsed
  • 1/2 cup rice, rinsed
  • 1 can diced tomatoes (14 oz)
  • 1 tablespoon cumin
  • 1 teaspoon turmeric
  • Salt to taste
  • Black pepper to taste
  • 2 cups water or vegetable broth
  • 1 cup Greek yogurt
  • 1/4 cup fresh cilantro, chopped

Instructions:

  1. In a medium pot, combine lentils, rice, diced tomatoes, cumin, turmeric, salt, black pepper, and water or vegetable broth. Bring to a boil.
  2. Reduce heat to low, cover, and simmer for about 25-30 minutes or until lentils and rice are tender and the liquid is absorbed.
  3. Remove from heat and let it sit, covered, for an additional 5 minutes.
  4. While the mixture is resting, prepare the Greek yogurt drizzle by mixing the yogurt with a pinch of salt and a squeeze of lemon juice (optional).
  5. Fluff the lentil and rice mixture with a fork and serve in bowls, drizzling with Greek yogurt and garnishing with fresh cilantro.
