Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/4 cup fresh cilantro, chopped (for rice)
  • Juice of 1 lime (for rice)

Instructions:

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix olive oil, cumin, paprika, salt, and pepper. Brush the mixture over both sides of the chicken breasts.
  3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from the grill and let rest.
  4. In a separate bowl, combine the diced mango, red onion, jalapeño, cilantro, and lime juice. Season with salt to taste to create the mango salsa.
  5. In a saucepan, bring the chicken broth to a boil. Add the rice, reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is cooked and liquid is absorbed.
  6. Once the rice is done, fluff it with a fork and stir in the chopped cilantro and lime juice.
  7. Slice the grilled chicken and serve it over a bed of cilantro lime rice, topped with the mango salsa.
