Ingredients:

  • 2 lbs beef tenderloin
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 tablespoons unsalted butter

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together the minced garlic, rosemary, thyme, parsley, salt, and pepper.
  3. Rub the herb mixture all over the beef tenderloin, ensuring it is evenly coated.
  4. In a large oven-safe skillet, heat the olive oil over medium-high heat. Sear the beef tenderloin for about 3-4 minutes on each side until browned.
  5. Transfer the skillet to the preheated oven and roast for 20-25 minutes or until the internal temperature reaches your desired doneness (135°F for medium-rare).
  6. While the beef is roasting, melt the butter in a small saucepan over low heat. Add minced garlic and sauté until fragrant, about 1 minute. Remove from heat.
  7. Once the beef is done, let it rest for 10 minutes before slicing. Drizzle the garlic butter over the sliced beef and serve.
