Ingredients:

  • 1 lb ground turkey
  • 1 cup uncooked rice (white or brown)
  • 2 cups kale, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 lemon (zested and juiced)
  • Salt and pepper to taste
  • 2 cups chicken broth or water
  • Parmesan cheese (optional, for serving)

Instructions:

  1. In a medium pot, combine rice and chicken broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until rice is cooked through. Fluff with a fork and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Add ground turkey to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 7-10 minutes.
  5. Stir in chopped kale, dried thyme, dried oregano, lemon zest, and lemon juice. Cook until kale is wilted, about 3-4 minutes. Season with salt and pepper to taste.
  6. To serve, spoon a generous portion of rice into a bowl, top with the turkey and kale mixture, and sprinkle with Parmesan cheese if desired.
