Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 cups mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Heat the olive oil and butter in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add the sliced mushrooms and cook until they are browned and tender, about 5 minutes.
  4. Add the minced garlic and dried thyme, cooking for an additional 1-2 minutes until fragrant.
  5. Pour in the chicken broth and bring to a simmer, scraping up any brown bits from the bottom of the skillet.

  7. Return the chicken to the skillet, coating it in the creamy mushroom sauce. Cook for another 2-3 minutes to heat through.
  8. Garnish with fresh parsley before serving.
