Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, and Italian seasoning, then add them to the skillet.
  2. Cook the chicken for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  4. Pour in the heavy cream and stir to combine, scraping up any bits from the bottom of the skillet.
  5. Add grated Parmesan cheese and stir until melted and smooth. Season with additional salt and pepper if needed.
  6. Add fresh spinach to the sauce and cook until wilted, about 2-3 minutes.
  7. Return the chicken breasts to the skillet, coating them in the creamy sauce. Let them simmer for an additional 2 minutes.
  8. Serve hot, garnished with fresh parsley.
