Ingredients:

  • 1 pound ground beef
  • 1 cup quinoa, rinsed
  • 2 cups water or broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 1/4 cup tahini
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a medium saucepan, combine the quinoa and water or broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the dried oregano, ground cumin, salt, and pepper. Cook for an additional 2 minutes to combine the flavors.
  5. In a small bowl, whisk together tahini, lemon juice, and a little water to thin it out, if necessary. Adjust seasoning to taste.
  6. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red bell pepper, and red onion. Toss gently to mix.
  7. Serve the quinoa and vegetable mixture topped with the seasoned ground beef and drizzle with the lemon-tahini dressing. Garnish with fresh parsley.
