Ingredients:

  • 2 cups rice
  • 1 lb culotte steak, cut into strips
  • 2 tablespoons olive oil
  • 2 tablespoons sunflower oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 2 teaspoons BBQ chicken spice
  • 1 teaspoon rice seasoning
  • 1/2 teaspoon cinnamon
  • 1/2 cup collard greens, chopped
  • 1/2 cup purple cabbage, shredded
  • 1 cup mushrooms, sliced
  • 1/2 cup cheese, shredded
  • 1 lemon, juiced
  • 1 lime, juiced
  • 1 tablespoon honey
  • 1/4 cup cooking cream
  • 1/2 cup green peas

Instructions:

  1. In a large bowl, mix olive oil, sunflower oil, lemon juice, lime juice, honey, salt, black pepper, cumin, thyme, oregano, and BBQ chicken spice to create a marinade.
  2. Add the culotte steak strips to the marinade, ensuring they are well coated. Let it marinate for at least 30 minutes.
  3. Cook the rice according to package instructions. Once cooked, fluff with a fork and set aside.
  4. In a large skillet over medium heat, sauté the diced onion and minced garlic until translucent.
  5. Add the marinated culotte steak to the skillet and cook until browned and cooked through, about 5-7 minutes.
  6. Stir in the mushrooms, collard greens, purple cabbage, and green peas, cooking until the greens are wilted and the mushrooms are tender.
  7. In a separate bowl, mix the cooking cream with a pinch of salt and pepper.
  8. To assemble, place a serving of rice in a bowl, top with the steak and vegetable mixture, sprinkle with shredded cheese, and drizzle the cooking cream over the top.
