Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and water is absorbed.
  2. Remove from heat and let it sit for 5 minutes, then fluff with a fork.
  3. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, olives, and feta cheese.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the quinoa mixture and toss gently to combine.
  6. Garnish with fresh parsley before serving.
