Ingredients:

  • 1 cup artichoke hearts, chopped
  • 1 cup fresh spinach, chopped
  • 1 cup broccoli florets
  • 1 cup mushrooms, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup Brussels sprouts, halved
  • 1 cup squash, diced
  • 1 cup green beans, trimmed
  • 1 cup peas
  • 1 can chickpeas, drained and rinsed
  • 2 chicken breasts, grilled and sliced
  • 1/4 cup walnuts, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons avocado oil
  • 1 onion, diced
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Juice of 1 lemon

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add onions and sauté until translucent.
  2. Add broccoli, Brussels sprouts, and squash. Sauté for about 5-7 minutes until they start to soften.
  3. Stir in mushrooms, green beans, peas, and artichokes. Continue to cook for another 5 minutes.
  4. Add cherry tomatoes, spinach, and chickpeas. Season with salt, pepper, oregano, and garlic powder. Cook until spinach wilts.
  5. In a separate pan, grill the chicken breasts until cooked through, then slice them.
  6. Toss the sautéed vegetables with lemon juice and avocado oil.
  7. Serve the vegetable mix in bowls, topped with sliced chicken and sprinkled with chopped walnuts.
