Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels, fresh or frozen
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small red onion, diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 ripe avocado
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 1/4 cup fresh cilantro, chopped

Instructions:

  1. In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and liquid is absorbed.
  2. In a large bowl, combine cooked quinoa, black beans, corn, diced bell peppers, and red onion.
  3. In a blender, combine avocado, lime juice, olive oil, salt, and pepper. Blend until smooth to create the dressing.
  4. Drizzle the avocado lime dressing over the quinoa mixture and toss gently to combine.
