Ingredients:

  • 500g mutton, cut into pieces
  • 2 cups basmati rice
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 green chilies, slit
  • 1/2 cup yogurt
  • 1/4 cup cooking oil or ghee
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup fresh coriander leaves, chopped
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon garam masala
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon cardamom powder
  • 1/2 teaspoon saffron strands, soaked in 2 tablespoons warm milk
  • 1/4 cup dried fruits (like raisins and apricots)
  • Salt to taste
  • Water as needed

Instructions:

  1. Marinate mutton with yogurt, garlic, ginger, turmeric, garam masala, and salt. Let it sit for at least 1 hour.
  2. In a large pot, heat oil or ghee. Add sliced onions and fry until golden brown. Remove half for garnishing.
  3. Add cumin seeds and green chilies to the pot. Stir for a minute, then add the marinated mutton. Cook until the mutton is browned.
  4. Add chopped mint and coriander leaves, and cook for 5 minutes.
  5. In a separate pot, boil water with salt. Add basmati rice and cook until it's 70% done. Drain the rice.
  6. Layer the partially cooked rice over the mutton in the pot. Sprinkle cardamom powder, saffron milk, and the dried fruits on top.
  7. Cover the pot tightly with a lid and cook on low heat for 30-40 minutes, allowing the flavors to meld and the rice to finish cooking.
  8. Garnish with the fried onions before serving.
