Ingredients:

  • 2 cod fillets
  • 1 cup blackberries
  • 1 tablespoon fresh rosemary, chopped
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions:

  2. While the sauce is cooking, season the cod fillets with salt and pepper.
  3. In a large skillet, heat olive oil over medium-high heat. Add the cod fillets and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
  4. Once the cod is done, remove it from the skillet and let it rest for a minute.
  5. Serve the cod fillets topped with the blackberry rosemary sauce and lemon wedges on the side.
