Ingredients:

  • 2 medium potatoes, peeled and chopped
  • 2 fillets of white fish (e.g., cod or halibut)
  • 2 cups fresh spinach, washed and trimmed
  • 1/2 cup crème fraîche
  • 1 medium onion, thinly sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh lemon juice (optional, for garnish)

Instructions:

  1. 1. Begin by boiling the chopped potatoes in salted water until tender, about 15-20 minutes. Drain and set aside.
  2. 2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and cook until caramelized, about 10 minutes. Remove from the skillet and set aside.
  3. 3. In the same skillet, add another tablespoon of olive oil. Season the fish fillets with salt and pepper, then sear them in the skillet for 4-5 minutes on each side or until cooked through and golden brown. Remove and keep warm.
  4. 4. In the same skillet, add the spinach and cook until wilted, then stir in the crème fraîche. Season with salt and pepper to taste.
  5. 5. Mash the boiled potatoes with the caramelized onions, adding a splash of milk or additional crème fraîche if needed for creaminess. Season with salt and pepper.
  6. 6. To serve, place a generous scoop of potato mash on each plate, top with the creamy spinach, and place the seared fish on top. Drizzle with fresh lemon juice if desired.
