Ingredients:

  • 4 sausages (your choice of pork or chicken)
  • 1 cup puy lentils, rinsed and drained
  • 4 medium potatoes, peeled and diced
  • 4 cups chicken or vegetable stock
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and carrots, cooking until softened, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Remove the sausages from their casings and crumble them into the pot. Cook until browned, about 5-7 minutes.
