Ingredients:

  • 1 pound ground beef
  • 8 ounces mushrooms, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 cup beef broth
  • 1 cup sour cream
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh parsley, chopped
  • Salt and pepper to taste
  • 8 ounces egg noodles
  • Parmesan cheese for serving (optional)

Instructions:

  1. Cook the egg noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sliced mushrooms to the skillet and cook until the mushrooms are tender, about 5 minutes.
  4. Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it apart with a spoon, about 6-8 minutes.
  5. Stir in the Worcestershire sauce, beef broth, and Dijon mustard. Bring to a simmer and cook for 5 minutes, allowing the flavors to meld.
  6. Lower the heat and stir in the sour cream, fresh thyme, and parsley. Season with salt and pepper to taste.
  7. Serve the beef mixture over the cooked egg noodles, garnished with additional parsley and Parmesan cheese if desired.
