Ingredients:

  • 1 medium head of cabbage, chopped
  • 2 large carrots, sliced
  • 12 oz chicken kielbasa, sliced
  • 4 cups beef broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent.
  2. Add the sliced chicken kielbasa to the pot and cook until browned, about 5-7 minutes.
  3. Stir in the chopped cabbage and sliced carrots, cooking for another 5 minutes until the vegetables begin to soften.
  4. Pour in the beef broth and add the smoked paprika, dried thyme, salt, and pepper. Bring the mixture to a boil.
  5. Reduce the heat to low, cover, and let it simmer for 20-25 minutes, or until the vegetables are tender.
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
