Ingredients:

  • 1 lb ground beef
  • 1 medium head of cauliflower, cut into florets
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 teaspoon dried oregano
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup beef broth

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until translucent.
  3. Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, seasoning with salt, pepper, and dried oregano.
  4. While the beef is cooking, steam the cauliflower florets until tender, about 5-7 minutes.
  5. In a large mixing bowl, combine the cooked ground beef mixture, steamed cauliflower, sour cream, shredded cheddar cheese, and nutmeg. Stir until well combined.
  6. Transfer the mixture into a greased baking dish and pour the beef broth over the top.
  7. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  8. Let cool for a few minutes before serving.
