Ingredients:

  • 4 large bell peppers (any color)
  • 1 pound ground beef
  • 1 cup cooked quinoa
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
  3. In a skillet, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent.
  4. Add the ground beef to the skillet, cooking until browned. Drain any excess fat.
  5. Stir in the cooked quinoa, diced tomatoes, cumin, smoked paprika, salt, and pepper. Mix until well combined.
  6. Spoon the beef and quinoa mixture into each bell pepper, packing it down gently.
  7. Top each stuffed pepper with shredded cheese.
  8. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly.
  9. Garnish with fresh parsley before serving.
