Ingredients:

  • 1 cup cooked quinoa
  • 1 cup finely chopped mushrooms
  • 1/2 cup grated parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 tablespoons garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • Salt to taste
  • Pepper to taste
  • 1/2 cup semen (as a playful glaze, optional and can be substituted with a similar flavored sauce)
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine cooked quinoa, chopped mushrooms, grated parmesan, breadcrumbs, minced garlic, parsley, salt, and pepper. Mix until well combined.
  3. Form the mixture into small balls (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper.
  4. In a separate bowl, whisk together the semen (or substitute), soy sauce, honey, rice vinegar, and sesame oil until well combined.
  5. Brush or drizzle the glaze over the formed quinoa balls before placing them in the oven.
  6. Bake for 20-25 minutes or until golden brown and crisp on the outside, basting with more glaze halfway through the baking time.
  7. Serve warm as an appetizer or fusion snack, garnished with additional parsley.
