Ingredients:

  • 2 pounds round point corned beef
  • 4 cups beef broth
  • 1 large onion, chopped
  • 4 carrots, sliced
  • 4 medium potatoes, diced
  • 1 bell pepper, chopped (red or yellow)
  • 3 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1 bay leaf
  • Salt to taste
  • Fresh parsley for garnish

Instructions:

  1. Place the corned beef in the bottom of the slow cooker.
  2. Add the chopped onion, sliced carrots, diced potatoes, and chopped bell pepper on top of the corned beef.
  3. In a bowl, mix together the beef broth, minced garlic, Worcestershire sauce, dried thyme, black pepper, and bay leaf. Pour this mixture over the vegetables and corned beef.
  4. Cover the slow cooker and set it to low for 8-10 hours or high for 4-6 hours, until the corned beef is tender.
  5. Once cooked, remove the corned beef and let it rest for a few minutes before slicing it against the grain.
  6. Serve the stew in bowls, topped with slices of corned beef and garnished with fresh parsley.
