Ingredients:

  • 4 chicken thighs, skin-on and bone-in
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon fresh thyme leaves

Instructions:

  1. Preheat your smoker to 225°F (107°C).
  2. In a small bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper to create a rub.
  3. Apply the rub generously to the chicken thighs, making sure to coat them evenly.
  4. Place the chicken thighs in the smoker and smoke for approximately 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C).
  5. While the chicken is smoking, prepare the maple-mustard glaze by combining the maple syrup, Dijon mustard, apple cider vinegar, and thyme in a saucepan over medium heat. Stir until well combined and bring to a simmer.
  6. Once the chicken is done, brush the glaze over the chicken thighs during the last 15 minutes of smoking.
  7. Remove the chicken from the smoker, let it rest for 5 minutes, and serve hot with additional glaze on the side.
