Ingredients:

  • 2 chicken breasts, cut into cubes
  • 1 large onion, finely chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1-2 green chilies, slit
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 1/4 cup yogurt
  • 2 tablespoons cooking oil
  • 2 eggs
  • Fresh cilantro for garnish

Instructions:

  1. In a bowl, marinate the chicken with yogurt, turmeric, coriander powder, and salt. Let it sit for at least 30 minutes.
  2. In a large pan, heat the oil over medium heat. Add cumin seeds and let them sizzle.
  3. Add chopped onions and sauté until golden brown.
  4. Stir in garlic, ginger, and green chilies, cooking for another minute until fragrant.
  5. Add the marinated chicken and cook until the chicken is browned on all sides.
  6. Add chopped tomatoes and cook until they soften and the oil begins to separate.
  7. Sprinkle garam masala, mix well, and simmer for 10-15 minutes until the chicken is fully cooked and tender.
  8. In a separate pot, boil water and gently add eggs. Cook for about 7-8 minutes for soft-boiled eggs. Remove, cool, and peel.
  9. Serve the chicken masala hot, topped with halved soft-boiled eggs and garnished with fresh cilantro.
