Ingredients:

  • 4 cups chicken broth
  • 2 tablespoons miso paste
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 200 g ramen noodles
  • 150 g pork belly, sliced
  • 1 cup bok choy, chopped
  • 1 carrot, julienned
  • 2 green onions, sliced
  • 1 tablespoon chili paste (adjust to taste)
  • 1 boiled egg, halved
  • Nori seaweed, for garnish
  • Sesame seeds, for garnish

Instructions:

  1. In a large pot, heat sesame oil over medium heat. Add the sliced pork belly and cook until browned and crispy.
  2. Pour in the chicken broth and bring to a simmer. Stir in the miso paste and soy sauce until fully dissolved.
  3. Add the chili paste and adjust the spice level to your preference. Let the broth simmer for about 10 minutes.
  4. Meanwhile, cook the ramen noodles according to package instructions, then drain and set aside.
  5. Add the bok choy and carrots to the broth and cook for an additional 3-5 minutes until the vegetables are tender.
  6. To assemble the ramen bowls, divide the cooked noodles among bowls, ladle the broth and vegetables over the noodles, and top with the crispy pork, halved boiled egg, and green onions.
  7. Garnish with nori and sesame seeds before serving.
