Ingredients:

  • 20 jumbo pasta shells
  • 1 pound Italian sausage, casings removed
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach, chopped
  • 1 jar (24 ounces) marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups romaine lettuce, chopped
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cook the jumbo pasta shells according to the package instructions until al dente. Drain and set aside.
  3. In a skillet over medium heat, cook the Italian sausage until browned. Drain excess fat.
  4. In a large bowl, combine the cooked sausage, ricotta cheese, 1/2 cup mozzarella cheese, Parmesan cheese, chopped spinach, garlic powder, Italian seasoning, salt, and pepper. Mix well.
  5. Stuff each cooked pasta shell with the sausage and cheese mixture and place them in a baking dish.
  6. Pour the marinara sauce over the stuffed shells and sprinkle the remaining mozzarella cheese on top.
  7. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  8. While the shells are baking, prepare the lettuce salad by combining the romaine, cherry tomatoes, and red onion in a bowl. Drizzle with olive oil and balsamic vinegar, then toss to combine.
  9. Serve the stuffed shells hot with the fresh lettuce salad on the side.
