Ingredients:

  • 2 cups cooked chicken, shredded
  • 1 cup cucumber, diced
  • 1 cup carrots, shredded
  • 1 cup pear, diced
  • 1 cup lettuce, chopped
  • 1/2 cup red onion, thinly sliced
  • 1 cup runner beans, trimmed and blanched
  • 1/2 cup grapes, halved
  • 1 cup plum tomatoes, quartered
  • 1 cup broccoli florets, blanched
  • 1 cup pineapple, diced
  • 1 can mixed bean salad, drained and rinsed
  • 1 can chickpeas, drained and rinsed
  • 1/2 cup walnuts, chopped
  • 1/4 cup peanut butter (for dressing)
  • Juice of 1 lemon
  • Juice of 1 lime
  • 1 tablespoon ginger, grated
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions:

  1. In a large mixing bowl, combine the shredded chicken, cucumber, carrots, pear, lettuce, red onion, runner beans, grapes, plum tomatoes, and broccoli.
  2. In a separate bowl, whisk together the peanut butter, lemon juice, lime juice, grated ginger, minced garlic, salt, and pepper until smooth.
  3. Pour the dressing over the salad mixture and toss gently to combine.
  4. Add the mixed bean salad, chickpeas, and walnuts to the salad, and toss again to incorporate all ingredients evenly.
  5. Serve chilled or at room temperature, garnished with additional walnuts if desired.
