Ingredients:

  • 1 cup jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 1 tablespoon sugar (optional)
  • 1-2 kaffir lime leaves (optional)
  • Sesame seeds or chopped cilantro for garnish (optional)

Instructions:

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, water, salt, and sugar (if using). If using kaffir lime leaves, add them to the mixture.
  3. Bring the mixture to a gentle boil over medium heat, stirring occasionally.
  4. Once it reaches a boil, reduce the heat to low, cover the saucepan with a lid, and let it simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Remove the saucepan from heat and let it sit covered for an additional 10 minutes to allow the rice to steam.
  6. Fluff the rice with a fork, remove the kaffir lime leaves if used, and serve warm, garnished with sesame seeds or chopped cilantro if desired.
