Ingredients:

  • 2 cod fillets (about 1 pound)
  • 4 medium potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fish stock or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Place the cod fillets on a baking sheet, drizzle with olive oil, and season with salt and pepper. Bake for 15-20 minutes, or until the fish flakes easily with a fork.
  3. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
