Ingredients:

  • 1 pound Italian sausage (mild or spicy)
  • 4 medium potatoes, sliced thinly
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Red pepper flakes (optional, for heat)
  • Olive oil (for sautéing)

Instructions:

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onion and sauté until translucent.
  2. Add the minced garlic and Italian sausage to the pot, breaking the sausage into smaller pieces as it cooks. Cook until browned.
  3. Stir in the sliced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  4. Add the chopped kale and continue to simmer for another 5 minutes until the kale is wilted.
  5. Stir in the heavy cream and season with salt, pepper, and red pepper flakes if desired. Heat through for a few more minutes.
  6. Serve hot, garnished with additional red pepper flakes if desired.
