Ingredients:

  • 2 venison steaks
  • 4 large eggs
  • 2 tablespoons unsalted butter
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 clove garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • Olive oil, for cooking

Instructions:

  1. 1. Preheat a skillet over medium-high heat and add a drizzle of olive oil.
  2. 2. Season the venison steaks with salt and pepper on both sides.
  3. 3. When the skillet is hot, add the steaks and cook for about 3-4 minutes on each side for medium-rare, or until desired doneness. Remove from the skillet and let rest.
  4. 4. In the same skillet, lower the heat to medium and crack the eggs into the pan. Cook until the whites are set but the yolks are still runny, about 2-3 minutes.
  5. 5. Meanwhile, in a small bowl, mix the butter, parsley, thyme, garlic, and a pinch of salt until well combined.
  6. 6. Serve the venison steaks topped with a dollop of herb butter, alongside the eggs.
