Ingredients:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 lemon (juice and zest)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 ripe avocado, diced
  • 1 small tomato, diced
  • 1/4 cup red onion, finely chopped
  • 1 tablespoon fresh cilantro, chopped
  • 1 lime (juice only)

Instructions:

  1. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, paprika, salt, and pepper to create a marinade.
  2. Place chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal or cover and refrigerate for at least 30 minutes.
  3. While the chicken marinates, prepare the avocado salsa by combining diced avocado, tomato, red onion, cilantro, lime juice, and a pinch of salt in a bowl. Mix gently and set aside.
  4. Preheat the grill or grill pan over medium-high heat. Remove chicken from the marinade and grill for about 6-7 minutes per side or until fully cooked (internal temperature reaches 165°F).
  5. Once cooked, allow the chicken to rest for a few minutes before slicing.
