Ingredients:

  • 3 aalu (potatoes), peeled and diced
  • 3 tamatar (tomatoes), chopped
  • 3 onion, finely sliced
  • 1 cup dal (lentils), rinsed
  • 2 tablespoons oil (vegetable or mustard)
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon garam masala
  • Fresh coriander leaves for garnish
  • Water as needed

Instructions:

  1. In a pot, heat the oil over medium heat. Add the sliced onions and sauté until they are golden brown.
  2. Add the ginger-garlic paste and sauté for another minute until fragrant.
  3. Stir in the chopped tomatoes and cook until they soften and start to break down.
  4. Add the diced potatoes and rinsed lentils to the pot. Mix well.
  5. Pour in enough water to cover the ingredients and bring to a boil.
  6. Reduce the heat to low, cover the pot, and let it simmer for about 30 minutes, or until the potatoes and lentils are cooked through.
  7. Once cooked, stir in the garam masala and adjust the consistency with more water if needed.
  8. Garnish with fresh coriander leaves before serving.
