Ingredients:

  • 8 oz andouille sausage, sliced
  • 2 cups cooked rice
  • 8 oz egg noodles
  • 3 tbsp butter
  • 2 cloves garlic, minced
  • 1/2 cup diced bell pepper
  • 1/2 cup sliced green onions
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a large pot, bring water to a boil and cook the egg noodles according to package instructions. Drain and set aside.
  2. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced andouille sausage and cook until browned, about 5-7 minutes.
  3. Add the minced garlic and diced bell pepper to the skillet. Sauté for another 2-3 minutes until the vegetables are tender.
  4. Stir in the cooked rice, egg noodles, smoked paprika, salt, and pepper. Mix well to combine all ingredients and heat through.
  5. Remove from heat and stir in the remaining tablespoon of butter and sliced green onions.
  6. Serve hot, garnished with fresh parsley.
