Ingredients:

  • 2 cups rolled oats
  • 2 cups almond milk (or any milk of choice)
  • 1 large apple, diced
  • 1/2 cup brown sugar
  • 1/4 cup chopped walnuts or pecans
  • 1/4 cup raisins or dried cranberries
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the rolled oats, almond milk, diced apple, brown sugar, chopped nuts, raisins, ground cinnamon, baking powder, and salt.
  3. In another bowl, whisk together the eggs and vanilla extract. Add this mixture to the oat mixture and stir until well combined.
  4. Pour the mixture into a greased 9x9 inch baking dish and spread it evenly.
