Ingredients:

  • 2 tablespoons olive oil
  • 1 pound chicken thighs, boneless and skinless, cut into bite-sized pieces
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium apples, peeled, cored, and diced
  • 1 cup chicken broth
  • 1/2 cup mayonnaise
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the chicken pieces and cook until browned on all sides, about 5-7 minutes.
  4. Add the diced apples, carrots, and celery to the pot. Stir to combine.
  5. Pour in the chicken broth and bring the mixture to a simmer. Reduce heat and cover, cooking for about 20 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. In a small bowl, combine the mayonnaise with the dried thyme, salt, pepper, and lemon juice. Stir until smooth.
  7. Remove the stew from heat and stir in the mayonnaise mixture until well incorporated.
  8. Serve hot, garnished with fresh parsley.
