Ingredients:

  • 2 pork chops (about 1 inch thick)
  • 1 cup unsweetened apple sauce
  • 1 tablespoon olive oil
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon cinnamon

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix the apple sauce, apple cider vinegar, Dijon mustard, cinnamon, rosemary, thyme, and minced garlic. Set aside.
  3. Season the pork chops with salt and pepper on both sides.
  4. In an oven-safe skillet, heat the olive oil over medium-high heat. Add the pork chops and sear for about 3-4 minutes on each side until golden brown.
  5. Remove the skillet from heat and pour the apple sauce mixture over the pork chops, ensuring they are well coated.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the pork is cooked through and reaches an internal temperature of 145°F (63°C).
  7. Let the pork rest for a few minutes before serving. Plate the pork chops and drizzle with the remaining sauce.
