Ingredients:

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 medium tomatoes, diced
  • 1 ripe avocado, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish (optional)

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add diced onions and sauté until translucent, about 5 minutes.
  2. Add minced garlic to the skillet and cook for an additional minute until fragrant.
  3. Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 7-10 minutes.
  4. Stir in the cumin, paprika, salt, and pepper. Mix well and cook for another 2-3 minutes.
  5. Remove from heat and fold in the diced tomatoes. Let the mixture sit for a couple of minutes to allow flavors to meld.
  6. To serve, spoon the beef mixture into a bowl and top with diced avocado. Garnish with fresh cilantro if desired.
