Ingredients:

  • 2 slices of whole grain bread
  • 1 ripe avocado
  • 2 large eggs
  • 1/2 cup plain Greek yogurt
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh herbs for garnish (such as cilantro or chives)
  • Lemon juice (optional)

Instructions:

  1. Toast the whole grain bread slices until golden and crispy.
  2. While the bread is toasting, bring a small pot of water to a gentle simmer. Add a splash of vinegar to the water.
  3. Crack each egg into a small bowl, then gently slide them into the simmering water. Poach for about 3-4 minutes, or until the whites are set and yolks are still runny.
  4. In a bowl, mash the avocado with a fork. Season with salt, pepper, and a squeeze of lemon juice if desired.
  5. In another bowl, mix the Greek yogurt with smoked paprika, garlic powder, salt, and pepper to taste.
  6. Spread the mashed avocado evenly on the toasted bread slices.
  7. Carefully remove the poached eggs from the water with a slotted spoon, letting excess water drip off.
  8. Place one poached egg on top of each avocado toast.
  9. Drizzle the spiced yogurt over the eggs and garnish with fresh herbs.
