Ingredients:

  • 4 strips of bacon
  • 4 large eggs
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 cup spinach, chopped
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a large skillet, cook the bacon over medium heat until crispy. Remove and set aside, leaving the bacon grease in the skillet.
  2. Add the diced onion and bell pepper to the skillet and sauté until softened, about 5 minutes.
  3. Stir in the chopped spinach and cook until wilted.
  4. Make four small wells in the vegetable mixture and crack an egg into each well. Season with salt and pepper.
  5. Cover the skillet and cook until the eggs are set to your liking, about 5-7 minutes.
  6. Sprinkle the shredded cheddar cheese over the eggs and cover until melted.
  7. Crumble the cooked bacon over the top, garnish with fresh parsley, and serve immediately.
