Bacon, Eggs, and Herbed Potato Hash

Ingredients:

  • 4 slices of bacon
  • 2 large potatoes, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 large eggs
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Fresh chives, chopped (for garnish)

Instructions:

  1. In a large skillet, cook the bacon over medium heat until crispy. Remove and set aside on a paper towel to drain.
  2. In the same skillet, add olive oil. Once hot, add the diced potatoes and cook for about 10-12 minutes, stirring occasionally, until they are golden and tender.
  3. Add the diced onion and minced garlic to the skillet with the potatoes. Season with smoked paprika, salt, and pepper. Cook for another 3-4 minutes until the onion is translucent.
  4. Create four small wells in the potato mixture and crack an egg into each well. Cover the skillet and cook until the eggs are set to your liking, about 5-7 minutes.
  5. While the eggs are cooking, crumble the cooked bacon over the top.
  6. Once done, remove from heat and garnish with fresh parsley and chives before serving.
